Grilled Flank Steak with Chimichurri

Ingredients

Steak Marinade

2 lb flank steak

1/4 cup olive oil

juice of 1 lime

3 cloves garlic, minced

1 tsp onion powder

1 tsp salt

1/2 tsp pepper

Chimichurri

3/4 cup cilantro

3/4 cup parsley

1/4 cup olive oil

2 tbsp red wine vinegar

3 cloves garlic, minced

1 tsp salt

1/2 tsp pepper

pinch red pepper flake

Instructions

1. Prepare marinade by mixing all ingredients together in a bowl.

2. Add flank steak to marinating dish and pour marinade over top. Marinade for minimum of 30 minutes but up to overnight.

3. In a food processor or blender, pulse all chimichurri ingredients together, until just combined. Do not over blend, you still want some texture.

4. When ready to cook, heat your grill to 450F and grease, let heat up for about 10 minutes. Add marinated Flank steak to hot grill and sear on each side for one minute. After searing both sides, lower heat to medium and cook each side an additional 3-4 minutes. Use a meat thermometer to read steak temperature, for rare take off of grill once meat has reached 125F or at 135F for medium.

5. Let meat rest at least 10 minutes before cutting. Spoon Chimichurri sauce over the top. Sprinkle with flakey sea salt. Enjoy!
